Ingredients:
- 2/3 cup smooth natural peanut butter or almond butter
- 1 cup unsweetened apple sauce or overripe mashed banana
- ½ cup unsweetened cocoa powder
- ⅔ cup chocolate NitraFlex 100% whey protein powder
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
Chocolate Ganache:
- 6 ounces dark or semi-sweet chocolate chips or no sugar added dark chocolate chips
- 1/4 cup heavy cream, half-n-half, or milk of choice
Instructions:
Preheat the oven to 350 degrees F. Line an 8-x-8 baking pan with parchment paper and set aside.
Combine the nut butter, apple sauce, cocoa powder, protein powder, maple syrup, and vanilla extract in a medium mixing bowl. Pour the batter into the lined pan and spread evenly with a spatula. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean. Do not overbake.
Allow the brownies to cool completely in the pan before topping with ganache.
In the meantime, add the half n half or milk to a small microwave-safe bowl. Microwave for 40 seconds, watching carefully to prevent boiling. Remove when just boiling. Add the chocolate chips to a medium bowl. Pour the heated cream over the chocolate chips; stir well with a spatula or whisk until silky. Pour the ganache over the brownies immediately using a spatula to spread the ganache evenly. Allow to cool for 10 minutes before sprinkling rainbow chocolate chips over the top. Place in the fridge for 30 minutes before slicing to allow the ganache to set.
